I need someone to save my mailbox, soon &#8212; and in the process, my sanity as well.<\/p>\n<p><a href=\"http:\/\/kirantarun.com\/food\/wp-content\/uploads\/2015\/01\/DSC_4313.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-8019\" src=\"http:\/\/kirantarun.com\/food\/wp-content\/uploads\/2015\/01\/DSC_4313.jpg\" alt=\"Crispy Herbed Smashed Potatoes | @KiranTarun http:\/\/kirantarun.com\/food\" width=\"612\" height=\"922\" \/><\/a><br \/>\nFortunately, crispy herbed smashed potatoes did just that.<\/p>\n<p>Even though we don&#8217;t like potatoes and there&#8217;s no explanation, except, we simply don&#8217;t enjoy potatoes. Let me assure you that there&#8217;s no hate either &#8212;\u00a0just a vegetable that we usually give a pass.<\/p>\n<p>Unless it&#8217;s crispy potatoes. Anything crispy shouldn&#8217;t be ignored. Cover and bring it to boil. Cook potatoes until tender (between 15 to 20 minutes).<\/li>\n<li>Add all ingredients for herbed oil into a bowl and stir to combine.<\/li>\n<li>Preheat oven to 450F. Line 2 baking sheets with foil. Set aside.<\/li>\n<li>Drain cooked potatoes and pat to dry.<\/li>\n<li>Using a masher, flatten\u00a0potatoes onto prepared baking sheet lined with foil.
