There were no gifting like a card or bouquet of roses — either we spent time together, making memories by dining out or noshing on mom’s celebratory cookies.
Best Valentine memories ever.
To continue our Valentine’s Day foodie theme, I present you with this strawberry chia pudding. I love breakfast that is so easy to make the night before. And before you are even fully awake the next morning, its all ready.
A healthy breakfast on Valentine’s Day is crucial when you know there’s chocolate swirled meringue and strawberry gulab jamun that needs to be devoured as well.

Makes 2 large servings
Ingredients:
- 1/3 cup chia seeds
- 1.5 cups of soy milk
- 1/2 tsp orange zest
- 2 banans, very ripe, peeled & sliced
- 6 large strawberries, hulled & sliced
- 2 blood oranges, peeled & sliced
Honeyed yogurt:
- 1 cup low-fat yogurt
- 1/2 tsp vanilla extract
- 2 tbsp raw honey
Directions:
- Combine chia seeds and soy milk into a very large mason jar or bowl. Using a spoon, stir and screw on the lid. Refrigerate overnight.
- In the morning, remove chia pudding from refrigerator. Add orange zest and stir thoroughly.
- Throw bananas, strawberries and peeled blood oranges into a blender. Blend until smooth.
- Combine the smooth fruity mixture into chia pudding. Stir until mixed through.
- In another bowl, add all ingredients for honeyed yogurt. Stir to combine.
- Layer strawberry chia pudding with honeyed yogurt. Garnish with fruits and nuts. Anything, really 🙂
Off to dig into the refrigerator for a bite or two of that sinful gulab jamun. Sshhhh….just don’t tell the Husband about it 😉

I did not know I could prepare a pudding mixing chia seeds and milk the night before (my first attempts at chia seeds based pudding haven’t been successful). I look forward to trying this recipe.

We make this pudding all the time as it is healthy but so easy too! The only thing is that my husband eats it too quickly lol 😛

I’ve never made a drink with chia yet, but I heard that it swells into a pudding-like consistency – or it becomes thicker. Add to the fact that chia are considered healthy. Can’t wait to experiment (and taste) chia!
