… or dinner rolls, pav bhaji rolls etc.
This recipe is just that versatile. But the most shocker is — I MADE HOMEMADE ROLLS!ME!!
Excitement aside, let me guide you to the whole process.
I’m a night baker, especially if it involves a lengthy baking process. I’d usually begin by switching the TV on. Yes, I’m that girl who prefers a little noise in the background.
It gets too quiet here, at night.
So, I get into the zone and begin pouring my heart, soul and full concentration over baking, all while the TV is making its contribution in the background.
And in the midst of calming baking session, I made a dash for the remote control ASAP and begin to search the MUTE button frantically. All thanks to a horror film trailer that is so obnoxiously loud and ….
SCARY *^@#^#*&^%! YIKES!!!
After a small frantic moment, the baking session continues to music in the background instead. A girl can never take anymore chances.
Makes 16 to 18 medium burger buns
Ingredients:
- 2.5 tsp active dry yeast
- 1.5 cup milk
- 3 tbsp butter
- 2 tbsp sugar
- 3.5 cups whole wheat bread flour
- 1 tsp salt
- white egg wash
- optional: poppy seeds
Directions:
- Heat milk in microwave for 1 minute or until hot to touch. Add butter and sugar. Stir to melt/combine. This mixture should read about 105 to 115 F in order to successfully proof the yeast. Allow the yeast to bubble for 5 minutes.
- In the stand mixer fitted with a dough hook, add whole wheat bread flour and salt. Stir just to combine. With the mixer on low, slowly drizzle in proofed yeast (wet ingredients).
- Increase the speed to medium-low and continue to knead the dough for the next 10 to 12 minutes.
- Once the dough is smooth, oil a huge bowl and transfer the bread dough into the bowl. Cover bowl with a damp paper towel, place the bowl in a humid area of the kitchen to allow dough to rise (double in size) for at least 1 hour.
- Once dough is doubled in size, punch it down and shape it. Evenly divide bread dough, roll it into desired shapes or size, place it on baking sheets (lined with parchment paper) with enough room between each dough ball, cover with a damp paper towel and allow to rise again for 30 to 40 minutes.
- Preheat oven to 350F.
- In a small bowl, add egg whites and 2 tbsp of water. Whisk to combine. Brush egg white wash over risen bread dough and sprinkle some poppy seeds.
- Bake bread dough for 20 minutes or more, depending on how brown you want the burger buns or bread rolls to be.
- Remove burger buns/rolls from oven and allow to rest on baking sheet for 5 minutes before removing to cool on cooling rack.
So, that’s a story of how these homemade buns were made. Without further fear and nail-biting moments, all thanks to the music station.
What’s your favorite time of the day to bake? And why are movie trailers to obnoxiously loud?!?

They look so yummy kiran !! I love burgers 🙂 oh yea i wonder why .. recently we saw the conjuring movie.. it was so loud and creepy too 🙁 I love to bake in mornings 🙂 Thanks for sharing the recipe ..
Sowmya — thanks! and yes, conjuring ads are also so loud. scary too 🙂
Great job! They look beautiful.
Homemade burger buns are the best!
Cheers,
Rosa
Rosa — thank you so much, friend 🙂
The buns look perfect, fresh and delicious. Your excitement is too cute.
I know exactly what you are talking about, I enjoy baking at night but for different reasons..the boys can get crazy and baking requires peace, and heck yes, the horror trailers feels wayyyy louder..
Ash — haha! small achievements keeps me happy 😀
Has been forever since I’ve been thinking of making my own homemade burger buns…yours looks perfecto!! 🙂

I usually bake in the morning but i love music on the background too. I bet every bite was so rewarding. Do you know how long they normally last? or any tips on storage?

Dixya — Mine lasted for a week, in the refrigerator. I kept them in a bread tin, with layers of lightly damp paper towels in between just so the bread don’t dry out. you’d want to microwave for at least 10 secs for fluffy buns 🙂
What perfect buns! Seriously beautiful!

I like to bake on weekends, on Saturday afternoon if I’m home with my boyfriend. I cook and bake, he washes kitchen utensils and eat. Ok, I eat too 🙂
Kiran, I like the “antique effect” you gave to the pics, it creates a dream atmosphere. I don’t know how you do it, looks really beautiful.

Hehe, I bake at night sometimes too and I don’t leave the TV on anymore since those horror trailers terrify me too 😉 I love the idea of making homemade burger buns. I have yet to try it but yours looks fabulous! There’s nothing better than the smell of homemade bread baking in the house. Yum!
Kelly — turn on the music instead 😉
These buns look wonderful, Kiran!

UMMMM – you just described EXACTLY what I do when I’m home alone 3 nights a week! Turns TV on, check. Night bakes, check. SCRAMBLES to find the remote and change the channel when she sees/hears a horror ad, CHECK. We are twins, I swear.

Homemade burger buns are fabulous! I used to be a night baker. That’s only because I had insomnia. Now I’m an afternoon (mostly) and sometimes morning baker. Love your photos Kiran, they are always beautiful! 🙂

Anne — i usually try baking at night so that most of the work is done, for me to shoot early in the mornings.
thanks for the compliment, my dear friend 🙂
I’m such a night baker, too. It always makes it a little bit harder for photographing to wait for natural light the next morning, though! Anyway, these buns look pillowy soft—and I adore the use of whole wheat. Thanks for the recipe, Kiran!
Irina @ wandercrush recently posted..Eating Thailand (Part I)
Irina — it’s the opposite for me. i love baking mostly at night because I can get quite busy early in the mornings. by the time there’s enough natural light, i begin clicking and i’m done for the day. Well, at least on the food photography chore 😉
Hehehehe I also do not like scary/thriller movie trailers…movies I do not watch, but these I cannot avoid, they spring up from nowhere, but I do my best to avoid them. As always love your photos, the white windows have added so much to your pics…takes me right back to the tropics and home 🙂 And of course the buns, they are oh so nice, since I am in the tropics right now I think I will settle for bhaji and them these my paos 🙂 Ok I should stop rambling. Have a good day! Cheers, Suchi
