Whole Wheat Honey Bread

The past weekend was spent so lazily. We ate out most of the time because I was sick of cooking.

There, I said it.

And there’s nothing wrong in admitting that I’m sick of eating my own cooking. Someone, please cook and feed meeeee….I’m talking about you, Mom 🙂

Not only did we dined out, I took the opportunity to hit up a couple of local Asian grocery stores to scour ingredients for some Malaysian recipes I have been planning to tackle for a long time now.

I’m happy to report it was a successful mission!

I’m aware we can’t always eat out. It’s a very expensive and unhealthy habit. The only way to ease back into my kitchen is through baking — a loaf of bread to be exact.

And what do you make with a freshly baked, loaf of bread? Sandwiches, of course!! And my all-time favorite toasted sandwich would be sliced fresh avocados, topped with lime juice, a sprinkling of salt + black pepper, finished with a generous drizzle of sriracha.

OMG. You’ve got to try this sandwich!!

It’s a triumphant feeling whenever I bake a loaf of bread. The whole experience transports me back into the days where Mom would baked rolls of sweet breads using the one and only ancient portable oven. And I’m 110% sure it’s not a toaster oven.

It had a huge coil right in the middle that disperses heat. Mom was a pro at managing it. She churned out stuffed coconut, kaya, red bean and plain sweet rolls for our lunch boxes.

Sigh. Childhood were definitely filled with sweet and delicious memories 🙂

Ingredients:

  • 3 cups whole wheat bread flour
  • 2 + 1/4 tsp active dry yeast (1 packet)
  • 1 + 1/4 cup milk
  • 3 tbsp butter
  • 2 tbsp raw honey
  • 1 tsp salt
  • 1 egg, whisked

Directions:

  1. Heat milk in microwave for 1 minute or until hot to touch. Add butter and honey. Stir to melt/combine. This mixture should read about 105 to 115 F in order to successfully proof the yeast. Stir in yeast, set aside and allow to bubble for 5 minutes.
  2. In a stand mixer fitted with a dough hook, add whole wheat bread flour and salt. Stir just to combine. With the mixer on low, slowly drizzle in proofed yeast (wet ingredients) and whisked egg.
  3. Increase the speed to medium-low and continue to knead the dough for the next 10 to 12 minutes.
  4. Once the dough is smooth, oil a huge bowl and transfer the bread dough into the bowl. Cover bowl with a damp paper towel, place the bowl in a humid area of the kitchen to allow dough to rise (double in size) for at least 1 hour.
  5. Lightly oil a loaf pan. Once dough has doubled in size, punch it down and shape it to fit into loaf pan. Cover with a damp paper towel and allow to rise again for 30 to 45 minutes.
  6. Preheat oven to 350F.
  7. Bake bread dough for 25 to 30 minutes or more, depending on how brown you want the bread loaf to be.
  8. Remove bread loaf from oven and allow to cool for 30 minutes before removing to cool on cooling rack.

I feel the same about cooking everyday, sometimes you just need a break. I realize that sometimes I do not appreciate my food just because I cooked it. A sandwich can be a good escape from more complicate recipes! Sriracha and avocado, a beautiful combo.

my favorite sandwich is a crusty bread with avocado and some sort of protein with tons of greens. I go through phases where cooking starts to get annoying too. I love how you eased your way back with this gorgeous loaf.

One of my absolute favourite things to bake is bread. Specifically challah or egg bread. Not the easiest thing when you eat gluten-free though. Luckily I have many tackers for my gluten-filled breads so I bake them anyway 😉

Can’t go wrong with a PB and banana sandwich…with a drizzle of honey is the way to my heart!

Yes yes yes, all the love for 100% whole wheat bread (we’re totally on the same page here if you saw my most recent post!). And the shape of your loaf is impossibly adorable.
I can definitely identify with the forbidden feeling of just…not wanting to cook. Lazy eating is my guilty pleasure, especially on days when I have 9 hours of class. No shame in it, and at the end of the week we can always just bake a loaf of homemade bread and call it even 😉

just lovely! i remember when i baked my first ever successful loaf bread. i swore i’d never buy the store stuff again (this promise did not last long as i’ve since discovered that if i read the labels properly, store bought can be good).

i like that this recipe doesn’t require overnight proofing.

i adore avocado on toast, i also like to add in tomato slices.

Your bread looks perfect and avocado + sriracha combination is something I must definitely try. I buy tons of avocadoes (have at least two or three every week) and am a fan of every single chilli sauce, so this is my kind of snack!
You know, here eating out is expensive and unhealthy too, but every time I go to Japan I realise if I lived there, I would cook at least 50% less: it’s cheap and can easily be healthy!

I know, many people say this, even in Switzerland where food is really expensive… I have no idea how much food costs in the US for example, but compared to many European countries eating out in Japan is really cheap and good quality. In Tokyo you can have an excellent lunch of fresh grilled fish, rice, pickles, miso soup and a glass of water or tea for… less than 10 dollars! And it’s not low quality fast food. They always serve you something to drink with meals (water or tea) and you are not obliged to buy drinks unless you go to a pub. Tips don’t exist in Japan (no one will accept a tip), so it also puts all the prices down. Compared to France or especially Switzerland, we were joking with my husband that eating out in Tokyo cost us less than eating home (including alcohol drinks we had every night).
Of course you can find very expensive restaurants too, like everywhere, but I felt really spoilt by the quality of food and service in places where I paid no more than 20 dollars for a meal (I did go to several more expensive places, such as an eel specialised restaurant, but again the price was ridiculous compared to what it would cost in Europe). Of course sushi restaurants can become very expensive, but I’m used to such a low quality sushi here (and expensive) even the cheapest places felt like extraordinary quality.

This entire week I’ve wanted to set aside some time for bread baking and failed. Now this bread, this should not take me 2 days to make and looks wholesome and delicious enough that I want to try right away.

I made this yesterday and it is delicious. I used two cups whole wheat flour and one cup unbleached bread flour. The only problem is that this was the very first time I’ve ever tried to bake my own bread and I didn’t understand why it didn’t rise as much as it should have. Maybe it would be helpful to include tips? I think my house was too cold, so next time I’ll try proofing the dough in a warmed oven.
