Whipped Coconut Cream

Hello friends!

I’ve missed this space of mine and the interactions that we usually have with each other. All no thanks to a very stiff neck for almost 2 weeks.

No fun.

Having a severe case of stiff neck deterred me from using my camera. Heck, it even deterred me from driving anywhere. Especially to the farmers market.

Oh boy, that stiff neck definitely was a huge pain… well, a pain in the neck.

Literally.

While it didn’t take much convincing that I won’t be able to test and shoot new recipes, a very stiff neck didn’t hamper me enough to whip up a cake and top it with luscious whipped coconut cream frosting.

Pretty sure there’s a solution to every problem. Forget about the camera, just bake, whip and devour.

Ingredients:

  • 2 cans (400ml) of full fat coconut milk, chilled overnight
  • 2 tbsp powdered sugar
  • 1 small vanilla bean, scraped

Directions:

  1. Carefully scoop out thickened chilled coconut cream from the cans. Reserve the liquid for smoothies.
  2. Add coconut cream into stand mixer fitted with a whisk.
  3. Whipped coconut cream on medium-low for 30 seconds. Increase speed to high and continue whipping for 2 minutes.
  4. Add powdered sugar, vanilla bean seeds and whip for 1 more minute or until coconut cream form stiff peaks.
  5. Spoon the cream on everything. Enjoy!
  6. To use as frosting, please refrigerate frosted baked goods if not devoured immediately.

I read about whipped cream recently on a vegan blog and promptly bought a can of full fat coconut milk and its sitting in the fridge.
I love the cake here. So good.

So sorry to hear about your stiff neck :/ A few weeks ago, I had a full weekend of photography planned when I came down with some tension dizziness. Knocked me out! No way I could photograph or cook. I hope you feel better soon.

This recipe looks fantastic! Have you tried it with coconut cream before? I think they sell it at TJs…

That sounds INSANELY good ! I must give this a try ! Just to confirm, you are using only the thick cream to whip, right ? Not the milky part.

Yes, I have made a small quantity of whipped coconut cream before, but I didn’t add sugar nor did I add vanilla bean – this version of yours I very very easily could “Spoon the cream on everything”!!!
So sorry about your stiff neck, Kiran – I have had stiff necks before and they are like back problems, severely debilitating! I sure hope it starts feeling better soon!

I’m sorry to hear about your neck, I hope it resolves soon! At least it didn’t stop you from making this and taking your trademark photos (the second one is my favorite with the white on white, that’s the one that I’ll share). I haven’t yet tried coconut milk whipped cream but it’s on my list!

hi priyanka — so glad you tried this recipe. this frosting does need refrigeration after icing. and a thick frosting would be better to hold shape 🙂

hello! both the cake and cream look so delicious! i did whipped coconut cream once and the problem i had was that when we stored the leftover cake in the refrigerator the cream hardened and had to wait for it to start melting before being able to eat it, it looked like candle wax, is this normal? did this ever happen to any of you?
