Hello!!!

I’m out from a short hiatus. It’s been a very refreshing and much needed break. And boy, we had a fun one for sure. There’s nothing like a Big Fat Indian Wedding fun!!

Catching a cold, fever and cough was inevitable with all the traveling and lack of sleep. A pot of hot soup simmered with delicate spices is what we are all craving at the moment.

Let’s just say, light and comforting food is what we all need after days of heavy and delicious feast.

To cut the story short: we are still traveling but with excess baggage that includes falling ill. Dreaming for a huge bowl of this pumpkin soup.

Ingredients:

  • 1 small sweet pumpkin — halved and roasted at 400F for 30 minutes
  • 2 tbsp coconut oil
  • 1 shallot, minced
  • 1/2 tsp turmeric powder
  • 2 tsp garlic paste
  • 1 tsp ginger paste
  • 2 heaping tbsp lemongrass puree
  • 1/2 cup thick coconut milk
  • 1.5 cups of roasted pumpkin puree
  • 1.5 cups vegetable broth

Homemade red curry paste:

  • 2 Thai red chilies
  • 1.5 tbsp tomato puree
  • 1 tsp ground coriander
  • 2 tsp fish sauce
  • 1/2 tsp ground white pepper
  • 1/2 tsp red pepper flakes
  • 1/2 tsp salt
  • 1 tbsp sugar

Directions:

  1. Scoop out cooled roasted pumpkin flesh. Puree in a food processor until smooth. Measure 1.5 cups and keep aside.
  2. Heat a large saucepan on medium. Add all ingredients for homemade red curry paste into a bowl. Stir to combine.
  3. Add coconut oil and minced shallot. Fry for 2 minutes or until fragrant.
  4. Sprinkle in turmeric powder, garlic and ginger paste. Cook for another minute before adding lemongrass puree and homemade red curry paste. Stir and cook lemongrass and red curry paste until fragrant.
  5. Add roasted pumpkin puree and stir to combine. Drizzle in coconut milk and vegetable broth. Stir to combine, bring soup to a boil and gently simmer for 10 minutes.
  6. Serve soup hot with a drizzle of coconut milk and garnish with mint leaves, chives and red chilies.

Yum Kiran. I’ve never had Pumpkin Soup but this looks so delicious! Are you back? I also love your recipe for the Thai Curry Paste, I haven’t attempted making it on my own. 🙂

Aww, poor u..i know how it feels as I am also down with bad cold that didn’t go away, but I didnt have the pleasure of holidays! This soup is enticing, there is always a wedge of pumpkin hidden in my fridge..so this is fated to be my dinner soon! take care Kiran..xx

Soup sounds wonderful – I didnt even know you could buy lemongrass puree!!! I could imagine how good this smelt!

Beautiful and vibrant colors from the Thai Yellow Curry & Pumpkin soup. I hope your husband feels better soon! My comfort food on a very chilly day is either hot & sour noodle soup or baked vegan mac & cheese.

This Pumpkin Curry soup looks divinely Nutrient Dense, & wonderfully nourishing, whether enjoying it for healthy or recovering from an illness purposes. And since we eat “with our eyes,” the colors will make it all the more inviting and delicious.

Since fresh pumpkin is out of season, how much canned pumpkin would be an equivalent? Also are the pastes and puree readily available in supermarkets or does this mean shopping at a natural foods store?

Hi Marilyn,
Thank you so much for the compliment on this soup!

Use the same amount of canned pumpkin puree as stated in the recipe for fresh. The pastes and puree are readily available at grocery stores (I shopped at Publix) but you can always sub for a stalk of fresh lemongrass, use fresh ginger and garlic in place of paste. Make it your own!

Hello, thanks for the recipe. I’m not familiar with lemongrass purée. Do you just buy lemongrass and purée it in your Vitamix with a little liquid? Also, is it necessary for the flavor? Will some lemon juice work instead?

Hi Mary — I get lemongrass puree from the market here but you could just use 1 whole stalk of fresh lemongrass, finely diced. Lemongrass is essential for the authenticity of Thai yellow curry flavor, but you could easily sub it with lemon juice. It will not taste the same though. Good luck and bon appetit!
