Hi friends!!

I just realized this would be my 2nd post in 2014!! Oh my. Only two posts and January is already escaping. Time flies. Though, this can’t be said about the weather.

Its ridiculous to complain about Florida weather now when we are so blessed in comparison to other places where it is still snowing. I’ll try my best to keep the complains to a minimal 😉

Returning from Malaysia to Florida this time proved to be a huge challenge. Never have I ever thought I would utter this sentence — It was a nightmare touching down in Miami without a winter jacket.

Dipping temperature + coupled with strong winds — winter jacket = unhappy traveler.

So friends, always be prepared when it comes to weather. Always. Even while traveling from the tropics. You have to, since the chill doesn’t end till you reach home.

Home that was left so cold. For 2 months. Brrr…..

Its simply time to make some curry. Especially when you can’t seem to find enough warmth in those boots, scarves, jackets and layers.

Ingredients:

  • 1 medium onion, chopped
  • 1 tsp garlic paste
  • 1 tsp ginger paste
  • 3 tbsp coconut oil
  • 1.5 tbsp harissa
  • 2 tsp curry powder
  • 6 small sweet potatoes, peeled and diced
  • 1/2 cup thick coconut milk
  • 1 tsp salt
  • 2 cups of hot water
  • 1 very ripe tomato, cut into wedges
  • 1 cup of cooked chickpeas
  • 2 handfuls of baby spinach leaves

Whole spices:

  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1 cinnamon stick
  • 3 whole green cardamom
  • 1/4 tsp ground turmeric
  • 2 bay leaves
  • 2 green chilies, slitted

Directions:

  1. In a small blender, add chopped onion, ginger and garlic paste. Blend into a paste. Add very little water (if needed) to aid in blending.
  2. Heat a deep vessel on medium-high. Add coconut oil and wait until it heats before adding all of the whole spices. Stir and cook for 1 minute or until fragrant.
  3. Add blended onion paste and cook for 5 to 7 minutes, stirring occasionally. Cook until paste is lightly colored, fragrant, thickens and oil separates on the sides.
  4. Stir in harrisa and curry powder. Cook for 1 minute before adding diced sweet potatoes, coconut milk and salt.
  5. Once curry thickens, add hot water, tomato wedges and cooked chickpeas. Bring the curry to a simmer, lower the heat to medium-low and put on the lid. Cook curry for 15 minutes or until oil separates on the sides.
  6. Remove curry from heat. Throw in 2 handfuls of baby spinach leaves, stir and serve hot with rice and chapati.

Kiran – this curry is so thick and full of goodness! It would be so good to sit down to this scrumptious and healthy bowl-anytime!

This winter has been brutal – all I can say is I cannot wait for spring – and if I ever complain about the heat this summer, you have my permission to throw a bowl of this curry at me (make sure you aim it so most of it lands near my mouth)! 🙂

We’re having NO winter in California – sounds a bit similar to your Florida winter – but I want winter. Cold and snuggling into sweaters and blankets, that sort of thing, I love it.

Welcome back Kiran! My parents are in Florida now and told me it has been chillier than usual too. A bowl of this hot curry sounds wonderful and would definitely help warm up from the cold temperatures 🙂 I love the sweet potatoes and chickpeas in here – looks amazing!

Gosh that curry must be a welcome warmer in the cold weather you are experiencing up North ! It’s actually unusually cold in Singapore (it’s still 29C haha) and curries are always good anyway 🙂

When I first landed in US without winter shoes and jackets I felt I have come to a wrong place. It was freezing and I couldn’t wait to reach our new apartment. But then I have got used to this over years. Still this winter has been the most craziest I have seen.

I LOVE that half-coconut bowl! So gorgeous! What a beautiful, nutritious curry Kiran. I am in love with legumes at the moment (who am I kidding, I mean, ALWAYS) so this chickpea goodness automatically jumps into the ‘must make’ category. Yum! Congratulations on the 2nd post in 2014! And I know… January is nearly flying by quickly, just in 2 days! Oh no about the weather in Miami…I was there few years ago and I remembered it was so sticky, humid and hot and I didn’t bring proper summer clothes! How long will you be in Florida for? Stunning curry….love the harissa ingredient, whoohoo, I’m obsessed with it!

Hi Kiran,

I was not feeling very well last night and suggested to my husband to cook using your recipe. Both, he and my daughter had a fantastic time doing the cooking using your recipe and both of were so proud with the end result. your recipe was easy to follow by both and it was also very delicious.

thank you so much for this lovely recipe! I have made it several times now- sometimes even subbing pumpkin and kale for the potato and spinach. The spice mix is perfect.
