Shrimp Fried Rice

What’s not to love about fried rice?

There’s something so comforting about enjoying fried rice. Rain or sunshine, humid or snow — it’s one of those special dishes that you can make anytime of the year.

It’s soul-food in my opinion.

If there’s one food that I might not consider sharing with anyone, that has to be fried rice. It takes a lot for me to muster enough strength to share.

Sounds like I might have admitted a huge weakness. Don’t use it against me. Please?

Apart from brown rice, I’ve tested this recipe using quinoa and regular white rice. The key to a very good fried rice is using day old rice. That just means using rice (or any grains of your choice) that is cooked a day in advance to avoid making a glob of mushy fried rice.

Trust me. You wouldn’t want to eat or serve mushy fried rice.

Shrimp Fried Rice |

Makes 4 servings


  • 1 tbsp cooking oil
  • 2 eggs
  • pinch of salt
  • 2 tbsp cooking oil
  • 3 cloves of garlic, minced
  • 1/2 lbs shrimps, shelled & deveined
  • 1 tbsp sambal oelek (chili sauce)
  • 6 scallions, chopped (reserve some for garnish)
  • 1/2 red & green bell pepper, diced
  • 1/3 cup fresh corn kernels
  • 3.5 cups cooked brown rice
  • 1/2 tbsp toasted sesame oil


  • 1 tsp brown sugar
  • 1 tsp rice wine vinegar
  • 1 tbsp fish sauce
  • 2 tbsp low-sodium soy sauce


  1. Prepare sauce by mixing all the ingredients into a bowl. Set aside.
  2. Heat a huge wok on high heat. In a small bowl, crack two eggs, add a pinch of salt and whisk.
  3. Once the wok is hot, drizzle in 1 tbsp cooking oil, swirl it around and add beaten eggs. Scramble eggs for a few seconds and remove from wok. Set aside.
  4. In the same wok, add 2 tbsp cooking oil. Add shrimps, minced garlic and sambal oelek. Stir and cook for 2 minutes.
  5. Add chopped scallions, bell peppers and corn kernels. Stir-fry for another 2 minutes on high heat.
  6. Throw in cooked brown rice and prepared sauce. Stir-fry until everything is combined.
  7. Add in scrambled eggs and a drizzle of toasted sesame oil. Stir and remove to serve immediately.

I also have an extreme weakness for fried rice! I only started making it at home recently and it is sensational and so much lighter than what you get at most restaurants. I’ve yet to test it with brown rice and I’m glad to hear it works. Your rice looks wonderful!

I know your weakness now;)…don’t worry will not use it against you my dear. I agree, a day old rice surely is perfect for rice. As much as I like to try out different grains, when it comes to fried rice, it’s white all the way.

That looks delicious! I grew up on normal fried rice, but recently have been making a lot of quinoa fried rice, and I love them both! Such a quick and easy and always delicious meal!

I love fried rice too-definitely soul food! When my mum used to make it there would sometimes be a layer of crispy rice at the bottom of the pan and that was my favourite bit! 😀

Shrimps fried rice is my family’s favorite and I make it at least once a week. I love using brown rice as the grain is more solid and not as moist compared to white rice. Very perfect for fried rice. 🙂 yes, it’s definitely comfort food and soul food!

Who doesn’t like fried rice? There’s so many different versions you can make too….though I usually just chuck whatever’s in the fridge into my rice 😉 I love how you serve your rice in a capsicum! So cute!

yeah fried-rice-love! One of my favorite fried rice recipes is with prawns/shrimps and the other with eggs so yours is the perfect cross. You just reminded me of sesame oil, our cook would add that, completely forgot about it in fried rice!

I like brown rice…just beacuse it tastes better to me than the white rice in the US. Favourite kind of fried rice is mixed fried rice which my dad made us. Those prawns are yummy. Would a smaller river shrimp go well in this rice too?

LCT — thank you so much! I’ve never heard of coconut ghee before. What a tasty combo. You can replace ghee in place of any cooking oil. It depends on your palate. I love using ghee in both savory and sweet recipes.

We ‘re thinking of using it in a Thai or Indian dish now:) (or maybe a combination of both cuisines) 🙂
