Salted Caramel Sauce

Oh, salted caramel. Do you have to be THAT irresistible? Indulgent? Couldn’t you just be as delicious with less calories? One can always dream, right? Regular lattes’ are so blah.

Hello, homemade caramel lattes! And ever-expanding waistline. Ooppss!!

Drizzle it over fruit, pastry, cakes or even dunking in with a spoon — no matter how you consume it, promise it’ll be just as addictive.

Although salted caramel sauce might look very easy to make, a few points have to be seriously noted in the recipe. Below. In the meantime, I’m going to try to resist marching into the kitchen to make a snack that involves sandwiching cookies with salted caramel or drizzling it into a huge mug of latte.

I have no will-power to resist. None whatsoever.

Ingredients:

  • 1.5 cups granulated sugar
  • 1/3 cup water
  • 4 tbsp butter, cubed and room temperature
  • 1/2 cup heavy cream, room temperature
  • 1 tsp fleur de sel
  • 1 tsp vanilla extract

Directions:

  1. Add water and granulated sugar into a saucepan. Heat saucepan over medium-high.
  2. RESIST any attempt to stir with a spatula or wooden spoon while sugar melts. Let it do its thing. It’ll bubble vigorously but DON’T be tempted to stick a wooden spoon to STIR. DON’T DO IT. You’d only risk a huge clump of mess! Crystalized sugar, no bueno.
  3. Instead, swirl the saucepan once or twice to evenly melt sugar and caramelize. Do not over-do it.
  4. Once sugar caramelizes into a nice dark amber shade, remove saucepan from heat and carefully drizzle in cubes of softened butter and cream. With a wooden spoon, continue whisking even though it looks like everything would bubble over, but trust me, it will settle. Just continue whisking, carefully and AVOID BURNS.
  5. DO NOT STICK YOUR FINGERS IN FOR TASTE. You will be awarded with 3rd degree burns. No joke.
  6. Once caramel is pourable, whisk in fleur de sel and vanilla extract. Store salted caramel sauce in airtight jars for up to a week.

Hope your week if off to a great start! Mine sucks since I have to make a run to the doctors office for blood-work. Hate needles. Glad that I have some of this sauce to calm my nerves, later.

thanks sweetie, all is fine. just regular blood-work but still, needles are no fun and ditto about this caramel. made latte and it was freaking delicious that I forgot about the needles. miracle 😀

Jars of any caramel sauce don last long at our house. Salted one is my weakness, oh hell, any caramel is my weakness. This looks amazing. Salted caramel ice cream is my favourite.

I love salted caramel and just like you, I wonder why it’s so darn fattening. Sucks. I always try to find ways to make things low fat, but I don’t think it’s possible with salted caramel. 🙂

I only tasted salted caramel a couple of years ago. I couldn’t believe my tongue. I will honest I couldn’t resist this if I was alone with it in my house. No will power for this. But I did try the overnight oatmeal you blogged about. That was most excellent. I was amazed how much I liked it. It was dessert quality for me, which made me feel wild and crazy when I was eating it for breakfast. Ha!

Thanks Sue. The caramelization bit can be tricky. Just make sure it doesn’t burn because that happens so quick!
