Happy {almost} weekend and I’m in a mood for a short story-telling.
Ingredients:
- 2 tbsp cooking oil
- 8 oz of brown mushrooms, cleaned and chopped
- 1 shallot, finely minced
- 1 carrot, peeled and chopped
- 4 cloves garlic, finely minced
- 1/2 tsp ginger, finely minced
- 1/2 tsp sea salt
- 1/8 tsp black pepper
- 2.5 cups of low-sodium vegetable broth
- a few sprigs of fresh thyme
- 1 tbsp lemon juice
- 1.5 tbsp goji berries
- 2 big handfuls of fresh spinach
Directions:
- Heat saucepan on medium. Add cooking oil.
- Once oil is heated, throw in shallot. Cook for 1 minute until fragrant.
- Add chopped carrot and fry for 3 minutes. Sprinkle in some minced ginger.
- Throw in chopped brown mushrooms and stir. Cook for a few minutes until mushrooms are slightly tender.
- Add minced garlic, salt + black pepper. Cook for a minute.
- Carefully add vegetable broth + fresh thyme. Bring everything to gentle simmer, about 10 minutes.
- Add lemon juice and goji berries. Simmer until goji berries softens.
- Check for seasonings.
- Remove from heat, add spinach and immediately serve a bowl to a sinus patient or yourself. Enjoy!
And oh, did I mention we are moving to the West Coast next week? We are calling Phoenix, Arizona our home until end of the year.
Definitely sad to leave Orlando for a few months, but I’m so excited for the farmers markets (there’s more than one!), a few Trader Joes (there’s none in Orlando) and desert life!
