Mushroom & Goji Berries Clear Soup

Happy {almost} weekend and I’m in a mood for a short story-telling.

This is a story of a boy who did not plan in advance while packing.

He took a flight to Baltimore last week and returned with a heavy sinus, cold, cough and throat infection.

Go figure.

It’s been soups and breads these days, in sweltering hot Florida weather. With an extreme sore-throat, he requested for something that didn’t require munching.

Clear soup to the rescue!

Here’s hoping he gets completely well before his flight tomorrow. I’m off to remind him to consult weather dot com before he completely forgets.

Duh.

Ingredients:

  • 2 tbsp cooking oil
  • 8 oz of brown mushrooms, cleaned and chopped
  • 1 shallot, finely minced
  • 1 carrot, peeled and chopped
  • 4 cloves garlic, finely minced
  • 1/2 tsp ginger, finely minced
  • 1/2 tsp sea salt
  • 1/8 tsp black pepper
  • 2.5 cups of low-sodium vegetable broth
  • a few sprigs of fresh thyme
  • 1 tbsp lemon juice
  • 1.5 tbsp goji berries
  • 2 big handfuls of fresh spinach

Directions:

  1. Heat saucepan on medium. Add cooking oil.
  2. Once oil is heated, throw in shallot. Cook for 1 minute until fragrant.
  3. Add chopped carrot and fry for 3 minutes. Sprinkle in some minced ginger.
  4. Throw in chopped brown mushrooms and stir. Cook for a few minutes until mushrooms are slightly tender.
  5. Add minced garlic, salt + black pepper. Cook for a minute.
  6. Carefully add vegetable broth + fresh thyme. Bring everything to gentle simmer, about 10 minutes.
  7. Add lemon juice and goji berries. Simmer until goji berries softens.
  8. Check for seasonings.
  9. Remove from heat, add spinach and immediately serve a bowl to a sinus patient or yourself. Enjoy!

 

And oh, did I mention we are moving to the West Coast next week? We are calling Phoenix, Arizona our home until end of the year.

Definitely sad to leave Orlando for a few months, but I’m so excited for the farmers markets (there’s more than one!), a few Trader Joes (there’s none in Orlando) and desert life!

Beautiful bowl of soup Kiran. I could definitely go for a helping of that sick or not. Where in Arizona are you moving to? I spent about a year in Phoenix and have family that have lived there for several years (still do) in both Phoenix and Flagstaff. Arizona is a beautiful state!

I love the Phoenix and Scottsdale area. Then there’s Sedona where you can get your spiritual side aligned. I love it there. I would miss grass on the front lawn but otherwise, it would be great to live in Phoenix. Summers are really hot. Hotter than Orlando. Good luck with the move!

Oh I love goji berries but somehow have never added them in soup… Interesting…

I love the fresh spinach in this dish…Will really make one rejuvenated after eating.

I see goji berries on sale at our market all the time but have never used them and never really understood how they could be used. Makes your soup all the more introguing. And this wonderful soup is the best medicine, isn’t it?

with the weather turning hot cold every other day, i’m sure in need of this soup! My mom often makes soup with goji, but Chinese style which I dont really like so these seem like a perfect solution!

Goji berries in soup is a fantastic idea and its so well paired with mushrooms. Definitely must give it a try. Although, we don’t find these berries very easily around here.

This recipe is fantastic! So simple, yet so flavorful. I added a pinch of cayenne and a shake of red pepper flakes to give it a little kick. So glad I came across this recipe in my search for new ways to eat goji berries.
