Lemon Rice

Rice.

So comforting. And lemons, makes it so light, tangy and savory — light enough that its almost too easy to devour it all in one seating.

Done it. Not guilty, one bit.

Its just as delicious with quinoa, brown rice or any choice of grains. But there’s something about fluffy basmati rice that makes this the “best” version of savory lemon rice.

You want to trust me on this because the proof is when I ate it all, in one seating.

Serves 3

Ingredients:

  • 2.5 cups of cooked rice, preferably day old
  • 2 tbsp cooking oil
  • 1 tsp mustard seeds
  • 1/3 cup raw cashews
  • 1/4 tsp turmeric powder
  • 1 green chili, finely chopped
  • 1 sprig curry leaves
  • 1/4 tsp salt
  • 1/3 cup freshly grated coconut
  • 1/2 large lemon, juiced

Directions:

  1. Heat a large non-stick skillet on medium. Add cooking oil. Once oil is hot, sprinkle in mustard seeds. Wait for it to sputter, before adding raw cashews, turmeric powder, chopped green chili and curry leaves.
  2. Stir fry until cashews are lightly browned. Sprinkle in salt and grated coconut. Stir to coat everything evenly.
  3. Dump in cooked rice and lemon juice. Fry for another minute, remove from heat and serve immediately.

This sounds awesome! I’d be so curious to see how it would work with cauliflower “rice” as a low carb option. Are curry leaves and fresh coconut something you easily find? I have access to shredded sweetened or unsweetened coconut, but haven’t seen fresh coconut anywhere around my area.

Julie — it’ll be awesome with cauliflower “rice”. Curry leaves and fresh coconut is readily available at your local Indian grocery store. Sometimes frozen, and that’s good too 🙂
