Hope your day is better than ours because I have news for you and trust me, its a foul one…

Alert the police, coz our trash can is MISSING!

We thought we lived in a neighborhood that is very safe. And that changed when someone had the nerve to whisk away our trash can! Our heavy-duty, $69 HomeDepot trash can.

Wow. There’s drama unfolding as I’m typing. Not your typical Wisteria Lane drama, just enough to rattle everyone.

I’ve had about “here” with so much stress over a trash can. Time to make a police report and then I can spoon this luscious lemon curd over every morsel to forget this all ever happened.

Wonder who took it at first place…

Makes about 2 cups

Ingredients:

  • 3 lemons, zested & juiced
  • 3 eggs
  • 1/3 cup sugar
  • 6 tbsp butter, cubed
  • pinch of salt

Directions:

  1. Fill a saucepan with 2 inch of water to act as a double boiler. Heat on medium or until water begins to simmer. Lower heat once water begins to simmer.
  2. Whisk eggs and sugar in another bowl, large enough to aid cooking over double-boiler.
  3. Place the bowl over simmering saucepan of water, ensuring the bottom of the bowl isn’t placed directly over simmering hot water. Whisk mixture for about 3 minutes or until lightly pale and ribbony.
  4. Whisk in butter to melt before adding more.
  5. Stream in lemon zest and juice with a pinch of salt. Continue whisking for about 2 minutes or until curd thickens ever so slightly.
  6. Carefully remove bowl away from the double-boiler and continue whisking until curd thickens to desired consistency.
  7. Strain thickened concoction through a fine mesh sieve. Cool curd to room temperature before refrigeration.
  8. Serve as desired.

We had lost our heavy duty trash cans couple of times even though the neighborhood is pretty safe. We even had our initials on one. Not sure what they do with it.

The lemon curd looks yum. What are you going to make with it?

What a lovely cheery post Kiran! It is ridiculously cold here at the moment so it’s wonderful to see those bright lemons on parade! I love lemon curd and make it regularly (in fact, my husband asked me to make some last night!) so I’d love to try your recipe and compare! As for missing trashcans and other bizarre stuff… hm. Nothing weird happening to me recently! I guess that’s a good thing! x

thats too funny! LAst summer we had a similar incident – and we live in a top 10 safe city. We found our trash and recycle bin hidden in our neighbors yard. Ofcoruse we didnt think our neighbors did it – but it mightve been some mischievous kids on the street..
but I didnt have lemon curd to get over it.. I love everything lemon and this looks so creamy and good..

I love your lighter version of this tasty looking Lemon curd, less butter is used in here so that is Why I made it!

Our trash cans are provided by the local council and have our street numbers painted on them. I never thought about them being stolen.

I love lemon curd and I have a big bag of lemons on the counter. I know what I’ll be doing tomorrow. (while I keep an eye on the trash can)
