Grilled Avocado & Cucumber Cold Soup

Summer is officially here and all I want to do is devour everything, chilled.

Well, almost.

Due to the fact that I could not fathom the idea of eating cold foods (with the exception of salads). Yet, miraculously I managed to convince myself to sample chilled soup without even making a run towards the microwave.

Miracle works its magic in the most delicious ways, I tell ya.

Since I can’t eat my weight on cold desserts, a chilled soup that comprises some of my favorite ingredients made the cut. Why has it taken this long for me to grill an avocado — is a question that has many answers. But let’s not get to the nitty-gritty details today.

Let’s just find solace in a comforting bowl of cold soup and the opportunity to experience it all — including grilled avocados.

There’s always “first” for everything.

Like, grilling whole scallions (green onions), cucumbers and peppers. Geez, I really need to use the grill more often by experimenting with different produce.

While I prepare the next long list of foods to grill, crank up your grill and make this soup.

Print This Recipe Print This Recipe

Ingredients:

  • some olive oil
  • 2 medium very ripe avocados, halved
  • 1 large cucumber, halved
  • 6 whole stalks of spring onions
  • 1 jalapeno
  • 1 lemon, juiced
  • 1/2 cup cold water
  • 1 clove of garlic
  • 3/4 tsp salt
  • 1/2 tsp black pepper

Garnish (optional):  toasted cubed bread, avocados, spring onions, chives, lemon zest & a drizzle of extra virgin olive oil.

Directions:

  1. Preheat grill to medium-high.
  2. Coat halved avocados with some lemon juice to avoid browning. Brush some olive oil over avocados, cucumber, spring onions and jalapeno. Oil the hot grill too before grilling the veggies.
  3. Grill veggies for a few minutes or until everything is grilled/charred. Remove grilled veggies onto a platter to completely cool.
  4. Chop grilled veggies and add it into a food processor with remaining lemon juice, cold water, garlic, salt and black pepper. Puree until smooth.
  5. Portion out the soup into bowls and refrigerate to cool before serving, topped with some garnish.

A scrumptiously summery and original soup! Avocados and cucumbers are rarely prepared in that manner (grilled) and that’s what I like about your recipe.

I recently tried cooked cucumber for the first time, and it was awesome! It tasted almost like a melon (not surprisingly), and I have never had grilled avocado. Might have to give this a try when summer hits here!

I am complete lover for clod foods, in fact my soups have to be at room temperature. Just can’t deal with hot stuff. But, cucumber gazpacho is one soup I always avoided, something to do with the raw cucumber in liquid state, not my type. But, now I know what I am doing there. As per avocados go, its very rare that you get nicely ripe avocados in India, so no avocados for me. Sigh!

Charul — the Husband is same when it comes to food temperatures. it has to be room temperature for him 🙂

as for nicely ripe avocados — it’s easy to get it ripe on your own. just don’t put it into the refrigerator. get it into a brown paper bag and leave it on the kitchen counter. it’ll brown in 2 days. but that all depends how young or green the avocados are when bought. the less green it is, the faster it’ll ripe 🙂

I love cold foods, especially cold soups such as gazpacho or vichyssoise. But I have yet to grill an avocado – I think there are two camps on that topic, some that love warm avocado (grilled or fried) and others that can’t take the flavour. I guess I’ll just have to try.

The soup looks perfect for hot summer days indeed and such a beautiful bright colour! I don’t think I have ever grilled avocado (I once baked it but it was not a good idea…). It looks good though.
When you said “cold dishes” I thought “I couldn’t survive without salads”. In the summer I eat salad as a meal several times a week. Sometimes even every day… Apart from this I cannot think of other raw dishes…

I don’t really enjoy cold soups like gazpacho or the likes…but you can almost convince me to try this because it is so pretty! Almost…I am still thinking about it. Cold soups…hmmm, not so sure yet…LOL!

Very original soup, I would have never thought of this combination of ingredients. It sounds and looks so very tempting too Kiran. I feel like grabbing a spoon and trying it out. =)

I’ve never made a cold soup at home. Avocados are my favorite so I would LOVE this!!

That looks amazing! I don’t have a grill but I recently got a grill pan for my tiny stovetop and I’m loving it. Can’t wait to give this recipe a try.
