Easy Ginger & Garlic Pickle

Some mornings, oatmeal or toasts just wouldn’t cut it. Instead, parathas slathered with butter, served alongside pickles, yogurt and chai is just what we crave.

Mmmm….

And trust me, if you know what I’m talking, just the thought of this whole menu itself would make you salivate. If you did, congrats and don’t worry — there’s no judging here.

But what happens when you reach for the pickles and there’s none? Fret not.

Make some noise and proceed towards the kitchen. Paratha and chai has to wait while you prep a good serving of these pickles.

I’m telling you guys, these pickle recipe cannot be easier. It’s my sister-in-law’s recipe and it needs to be slathered on parathas, chawal, chapatis and basically, everything.

Ingredients:

  • 1/3 cup of white vinegar
  • 1 whole knob of ginger, peeled & sliced lengthwise into matchsticks
  • 15 large cloves of garlic, peeled & sliced lengthwise into matchsticks
  • 10 fresh green chilies, top removed & slitted
  • 8 large chuhara (dried dates), pitted & sliced
  • 1 tsp kalonji (onion seeds)
  • 1/2 tsp salt

Directions:

  1. Add all ingredients into a clean bowl. Stir and allow to marinade for a few minutes or at least an hour. Store in an air-tight, sterilized jar.
  2. Keeps well for up to 2 weeks, refrigerated.

Disclaimer: This sweet, salty, spicy and garlicky goodness comes with a warning. There’s raw garlic in this, a copious amount of garlic. So if you are planning a date thereafter, good luck getting rid of that garlicky breath.

Personally, I’d postpone all my appointments and just enjoy what ever this jar of garlicky goodness has to offer.

Your post reminded me of my mother’s recipe of ginger garlic chili pickle but sans the chhuara. I have got to give this one a try.

Garlic pickles? Never tried. I stick with cucumbers. I’m not sure I’ll be able to digest raw garlic but I’m intruiged.
