Creamy Coconut Kheer

Hello friends!! How’s Friday treating ya? For us, its pretty delicious especially when there’s creamy coconut kheer to look forward to before going on a full-fledged fast tomorrow.

Full fasting without a drop of water. Bet your Friday isn’t sounding too gloomy now, eh?

There’s negative skeptics out there, spewing nasty comments every time we observe this fast. Karva Chauth is a fast observed for married couple, seeking longevity and happiness. The Husband and I do it together, so I don’t understand why there’s still so much negative opinion surrounding this ancient Indian ritual/practice.

It’s only for 1 whole day and fasting supposedly is a very healthy practice to rid the body from toxins. I’m trying to be at peace with the negativity in the real world. For that, a few spoonfuls of this creamy indulgence is needed, right now.

Serves 6 to 8

Ingredients:

  • 1/2 cup rice
  • 1/2 tbsp coconut oil
  • 2 cups thick homemade coconut milk
  • 2 cups low fat (2%) milk
  • 1/4 cup sugar
  • pinch of salt
  • 1/2 tsp vanilla extract
  • 1/4 cup fresh coconut meat
  • optional: 2 tbsp coconut rum

Garnish: Chopped raw pistachios

Directions:

  1. Soak rice with some water for 15 minutes. Rinse and add rice in a heavy-bottomed saucepan with 1/2 tbsp coconut oil. Heat saucepan on medium.
  2. Lightly toast rice for 2 minutes. Drizzle in coconut, low fat milk and sugar. Stir to combine, cook until rice softens and thickens. Stir every now and then. Coconut rice pudding should take about 30 to 40 minutes to swell and thicken, on medium-low heat.
  3. Once rice pudding swells, season with a pinch of salt.
  4. Remove pudding from heat and drizzle in vanilla extract. Stir to combine.
  5. Serve at room temperature or chilled, topped with chards of fresh coconut meat and chopped raw pistachios.

I do it twice a year. I bet it’s great for me after the 363 days of butter and sugar overload.The kheer looks beautiful and I love mine with lot of texture like this one.

First of all, this kheer looks so luxurious! Oh my gosh what a treat!
Second of all, kudos to you for being strong enough to fast for a day! I’m sure you and your husband help support each other to get through it 🙂 I think I could do the no food, but I’d be a huge wimp with the no water part :/

I’ve never gone without water but I do fast. It’s not risky to go without water? or do you do it only when it’s not a gazillion degrees?

Your kheer sounds yummy and as for the fast, anything that brings a couple together and works for longevity must be the right thing. Good luck!

Maureen — fasting safely is the key. without water can be tough but there’s no strict restrictions. if i need water, I’d down it without compromising my health. That’s the key to fasting safely 🙂

I only fasted once and it was for a college experiment 🙂 I’m not sure I liked it, if you have some mental work to do it might be very stressing. I remember I could not concentrate much. I guess the more you fast the better you become at dealing with food deprivation. If you have a purpose and a husband to fast with it cannot be too bad!
This recipe looks extra delicious, this is how a coconut paradise looks like!

Daniela — it requires mental preparation and yes, the key is to wake up at the crack of dawn (before sunrise!) to down as much water as possible ;D

Since marrying my Indian husband (I’m American) I’ve started holding the Karva Chauth fast along with my mother-in-law. I think it brings us closer together and my husband gets very sentimental about it (though not enough to fast along with us). Now that we have a baby, I’ll fast twice a year. It gets a little tough toward the end of the day, but fasting isn’t all that bad (especially because we don’t usually go without water).

The kheer looks delicious by the way. I’ll have to add it to my recipe book. (Do people still use those?)

Fasting is a wonderful spiritual and physical practice and it’s so nice your husband is fasting with you.
The kheer looks like a fantastic treat after the fast.

This looks delicious! And I believe that there’s a huge difference between fasting for religious/ spiritual reasons and fasting to lose weight. You are doing it for spiritual reasons, but I feel like a lot of people out there who are against fasting are against it for dieting/ whatnot! Glad you were able to enjoy this tasty treat!

I LOVE lOVE LOVE this dish. You get negative comments, because you do a one day fast with your husband???? What’s the problem with that. I must be missing something and I think I’m glad I missing that something.

Oh, yumm! Creamy, luscious, irresistible. I fast for a full month sunup to sundown without even a drop of water, so I know what you mean. It take s more mental power than physical.
