Happy August!!

And hello to yet another new month and almost the end of another week. Time is flying by like a blink of an eye!! And before you know it, summer would be replaced by autumn and then winter comes along.

2014 is just lurking around the corner.

Ohmygosh.

And then, there’s the replacing of TV and blender — which is still in the budgeting phase because it’s so so expensive!! We’ve been without any for a week now. Life is not the same.

But that’s not the priority 🙂

So instead of babbling how expensive it’s going to be to replace broken TV and kitchen appliance, let’s talk about social media.

I love discussions and sometimes find it difficult to get everyone’s opinion, here on the blog. That’s where Facebook & Google+ pages comes in. I find it so interactive with multiple flows of discussions and inputs from so many people.

For instance, my blender broke and who do I rush to get advise from? Not Google or consumer/product review websites. It was social media to the rescue! I’ve read that social media can be a huge deterrent for many and in general, a bad practice.

That shouldn’t be the case.

The key is to really know the reason of using it and how to make the best use out of it. But above it all, being responsible is also key. I can’t imagine having so many social media accounts and hammering out ruthless opinions only to have it all bite me in a job interview. Not cool.

Now that we have covered responsibility, the next important step is how much are you prepared to entangle yourself into social media? Rule of thumb is you wouldn’t want each and every second of your life to be dictated by social media.

Life is only once. Live it to the fullest. Plan a picnic with the family. Go on a family hike. Nurture a hobby. Have a weekend brunch tradition. Make pancakes together.

Makes 12 to 14 small pancakes

Dry ingredients:

  • 1/2 cup whole wheat flour
  • 1/2 cup all purpose flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 heaping tbsp chia or flax seeds, crushed

Wet ingredients:

  • 1 large egg
  • 1 cup whole milk
  • 1 lemon, zested and juiced
  • 1/2 tsp vanilla extract
  • 1 cup fresh blueberries
  • butter for griddle

Directions:

  1. In a large bowl, sift all dry ingredients.
  2. In a separate bowl, whisk wet ingredients (with exception to blueberries and butter).
  3. Gently stir dry ingredients into wet ingredients. Do not over-mix. Fold in fresh blueberries.
  4. Allow batter to rest for 15 minutes.
  5. Heat griddle or a large non-stick skillet on medium.
  6. Add a little butter and swirl around the pan. Spoon 2 heaping tbsp of batter (per pancake) onto hot skillet. Allow pancake surface to bubble for a minute, before flipping. Cook for another 1 minute or until pancakes are lightly browned.
  7. Remove pancakes onto a parchment lined baking sheet and keep it warm in the oven, preheated on a low/warm setting.
  8. Continue making pancakes with the rest of batter.
  9. Serve pancakes with warmed maple syrup, butter and fresh blueberries.

I mean considering the fact that it has helped you, me and everybody else too in some way or other, I don’t think we can and why should we. Your pancakes look luscious and so summery with blueberries on top… I have never had American pancakes and I guess the only way to taste them would be to prepare them on my own 🙂
I am not a big user of social media (I am the one who looks at users’ comments in several languages, on different forums, websites… it took me a month tomade a decision and replace my broken microwave!).

Great recipe! as for my take on social media. It definitely has its pros and cons. I did a paper on this very subject in on of my school classes in college. I know a lot of jealousy is spiked through social media. I’ve experienced this in my own life. then there is the twist where employers look at your site and judge you on that. People either do not get hires, or they get fired over it. I’ve even heard of employers asking for your password on these sites which I think is wrong. If you bash your job on the website that is grounds for firing, but if you are in a photograph having a cocktail on your own time I think that is none of their business. That’s my two cents. I can go on and on, on this subject.

Please share what you decided about a new blender! I have been without a good blender for years because I can’t make up my mind! I got blueberries as soon as I came back. I’ve been eating fresh blueberries and waiting to try using some for cooking. These pancakes are VERY tempting right now. Good thing it’s summer break – I can make these in the late morning and make it to brunch with the kids (obviously I cannot wake early enough for weekdays once school starts. Heheh).

Yum yum yum! The pancakes look amazing.
As for the social media, i just can’t stop being in awe of all those who are so active on the social networking sites. I just can’t seem to be able to manage the time for them! May be it is the classic case of busy without work in my case 😛

Ok, so I had these and they were delicious. I do have a couple notes, though.
1. Use a large lemon! I used a small-medium sized lemon and I really only got the lemon taste in certain bites.
2. Let’s take about the maple syrup. I didn’t have fresh blueberries so I used frozen ones instead. I put a cup of blueberries in a ziploc bag with a little water, then sealed it and ran it under cool to room temperature water to thaw them. After I folded the blueberries into the batter, I saved the juice in the bag. For the syrup, I used 1/4 cup of maple syrup, added 1 teaspoon of vanilla extract, and poured some of the blueberry juice in it, maybe 1 – 2 teaspoons(I didn’t measure it, just eyed it up). It was DELICIOUS.
