Blood Orange & Meyer Lemon Madeleines

You know what’s annoying about me lately? BLOOD ORANGES & MEYER LEMONS.

It seems to pop all over the place and I always end up buying. Apparently, I’m holding onto all the anti-oxidant and Vitamin C’s as much as I can admire and stomach.

Also, there are a bazillion variety of citruses here in the States. I’ve never heard of blood oranges before and its a sight of beauty!

Except for the stains. On a marble surface. Considered warned and make these madeleines for consolation. You can cry over spilled stains, afterwards.

Makes 24 madeleines

Ingredients:

  • 1/2 cup (1 stick) unsalted butter, melted & cooled
  • 1/2 cup sugar
  • 3 eggs, at room temperature
  • 1/2 tsp orange blossom water
  • 1 small blood orange, juiced
  • 1 small meyer lemon, zested & juiced
  • 1 cup whole wheat pastry flour
  • 1/3 cup almond flour/meal
  • 1 tsp baking powder
  • pinch of salt

White Chocolate Ganache:

  1. 1/2 cup white chocolate chips
  2. 1/8 cup heavy cream

Directions:

  1. Preheat oven to 375F. Grease madeleine pan. Set aside.
  2. In a stand mixer, beat melted butter and sugar on medium speed.
  3. Gradually add 3 eggs and continue beating until liquid is pale and ribbony. It would take about 1 minute.
  4. Drizzle in orange blossom water, blood orange and meyer lemon juice & zest. Beat to incorporate.
  5. Sift all the dry ingredients and with the mixer on low, gradually add dry ingredients to incorporate into wet ingredients.
  6. Remove bowl from stand mixer. With a spatula, scrape batter from the sides & bottom. Do not over-mix.
  7. With a spoon, evenly fill batter into madeleine pan. Do not fill to the top.
  8. Bake madeleines for 10 minutes or until the center sets and the edges are lightly browned.
  9. Remove pan from oven and cool madeleines in the pan for 5 minutes, before removing to cool on cooling rack.
  10. Meantime, make white chocolate ganache. Heat heavy cream until hot. Pour hot cream over white chocolate chips. Stir and let sit for 5 minutes. Stir until smooth. If need be, microwave for 10 sec intervals until white chocolate is melted through. Do not over-heat.
  11. Once madeleines are completely cooled, dunk each madeleines into warm white chocolate ganache. Decorate with a sliver of fresh blood orange segments and place it on a cooling rack.
  12. Serve it up with a side of tea or coffee!

These look so pretty. I love blood oranges there ruby colour is just beautiful and their delicious, I’ve never had a meyer lemon would love to try one.

About the varieties if citruses, I would say the more the merrier! 🙂

I never tire of citrus! Particularly not Meyer lemons. When we lived in Florida, we had a tree — still miss those lemons. Particularly when I see the prices in the store! 😉 Really good madeleines — thanks.

I am a big fan of blood orange juice. I totally agree about the stain..Oh well, it’s all worth it in the end. Look at those gorgeous madeleines. Amazing.

I can’t get tired of blood oranges. So juicy and sweet, they are my favorite type of orange. On the other hand I’m not sure I have ever had meyer lemons. Lemons from Sorrento are awesome too.
These madeleines are definitely inviting, I like the bold citrus accent here!

Wouldn’t I find it grand to find a couple of these on my plate along with a cup of tea. The tang of the flavors would probably prompt me to try to get a third one too.
