Banana & Coconut Protein Pancakes

Hello!!

Back after a pretty long hiatus. I’ve been in a great deal of funk. So, I won’t bother you with any negative details on a beautiful Wednesday morning.

Instead, let’s talk about being a grown up! And eating pancakes while doing that.

Some days I just release a huge sigh at the thought of the long-gone days, when I was just a kid.

Being an adult is tough. Its just easier to be a kid. Zero responsibilities and not a world of problem. And i think, it’s okay to want to wish that because who wants to deal with taxes, unemployment and bills all day long.

Zero fun.

What truly fun is playing, going to school, eating mindlessly and playing. Eating and playing. Eat more and playing more.

Repeat.

There’s school-work, of course. But that’s funner than a lot of adult stuff that sometimes can get pretty serious and boring.

Ugh. I want my childhood back. I want the kid in me, returned. I want to convince the kid in me back then that she had it all going on for her. Stop wishing to be adult so soon.

Ugh.

I’ll eat these pancakes and shut up now. Reminisce with me?

Serves 2

Ingredients:

  • 2 very ripe bananas, mashed
  • 4 large egg whites, room temperature
  • 2 tbsp coconut oil, melted and cool
  • 1 tsp vanilla extract
  • 2 tbsp chia seeds
  • 2 tbsp flax seeds
  • 1/3 cup coconut or almond flour
  • pinch of salt

Directions:

  1. Using a spice grinder, ground chia and flax seeds. Set aside.
  2. In a huge bowl, mash 2 very ripe bananas with a back of a fork or a masher. Whisk in egg whites, melted coconut oil, vanilla extract, grounded chia and flax seeds. Stir everything until combined.
  3. Whisk in coconut flour. Stir until well mixed in.
  4. Set “batter” aside to bloom and rest for at least 20 minutes. It will be a very thick batter, so be prepared for a little elbow grease.
  5. Heat griddle or a large non-stick skillet on low.
  6. Once griddle is heated, swirl in very little coconut oil or butter. Do not go overboard here.
  7. Spoon 2 heaping tablespoons of thick batter (per pancake) onto hot griddle. Using the back of the spoon, spread batter evenly to the shape of pancakes, with the desired thickness in mind.
  8. Increase heat to medium-low and cook pancakes until lightly browned before flipping. This should take about 2 minutes.
  9. Once flipped, cook for 2 more minutes.
  10. Remove pancakes onto a parchment lined baking sheet.
  11. Reduce heat on the griddle back to low, and repeat the process of making pancakes from the rest of batter.
  12. Serve immediately with a nice dollop of thick yogurt, fresh berries, coconut chips and a healthy drizzle of maple syrup.

We have regrets about growing up way too fast. Remind your kids to enjoy every moment of being just, a kid. Don’t be in a rush for adulthood, because trust me, it can get ugly 😀

It is tough being an adult, isn’t it! Hope you get out of your funk soon. Just hang in there- things do have a way of working out. I am on a gluten free, refined sugar free diet for a month (basically to avoid snacking on all the wrong stuff) so love that you have this posted today. Thats what I am making for breakfast tomorrow. I am glad you are back. Was missing your beautiful pictures and posts! I love this pan cake. Simple yet healthy and I am sure it tastes way far better than the all purpose flour pancakes. I need to try making some almond flour.
