Amaretto Ice Cream

Hi there!!

What better way to begin Friday with some liqueured ice cream? I’d cheers to that! With barely enough sleep last night, all I can think about is having this amaretto ice cream to aid with sleep deprivation.

Why?

Because I’m literally taking a red flight out to be with the Husband. In Arkansas. Sounds fun? We’ll have to wait and watch.

I don’t know about you, but as soon as I hit 30s, sleep is now an issue. There isn’t a day that goes by without a peaceful sleep. I assumed taking a short break from blogging would help me get through it — but that didn’t prove to be the right solution.

Perhaps its genetic? My mom went through similar symptoms. Nothing worrisome, but I guess my daily 8 hours of snoozing isn’t a privilege anymore.

Not sure if adding a little amaretto liqueur would aid in sleep deprivation. I’d love to think so 😉

Ingredients:

  • 4 cups of 2% (low fat) milk
  • 1 whole vanilla bean, slited
  • 1/8 cup sugar
  • 6 small egg yolks
  • pinch of salt
  • 4 tsp amaretto liqueur
  • 1/2 cup crushed amaretti cookies

Directions:

  1. Make sure ice cream bowl is in the freezer 24 hours before beginning the process.
  2. Add milk and vanilla bean into a large saucepan. Heat milk on medium-low for a few minutes, until milk is hot not simmering.
  3. Meantime, whisk sugar and egg yolks in a large bowl. Whisk until yolks are slightly pale in color (about 2 minutes).
  4. Using a measuring cup, gently temper the egg yolk mixture with hot milk while whisking, vigorously.
  5. Add tempered egg mixture into the same milk saucepan and cook it on medium-low until thickens. This should take about 15 minutes or so. Stir custard every now and then to avoid burn.
  6. Once custard is thicken to desired consistency, remove from heat. Strain custard through a fine mesh sieve.
  7. Allow custard to slightly cool before adding a pinch of salt and amaretto liqueur. Bring custard to room temperature and refrigerate to chill for a few hours.
  8. Add chilled custard into chilled ice cream bowl and churn ice cream according to makers instructions. Add crushed amaretti cookies half-way into the churning process.
  9. Freeze ice cream for a few hours to set.
  10. Remove ice cream from the freezer for a few minutes before serving. Serve ice cream topped with more amaretti cookies.

I am drooling! I love almonds and amaretto so bring on the recipes! I’m so impressed you use low-fat milk and so little sugar but it looks so smooth – the amaretto must be the secret. Yum!
And I have somewhat similar issues with sleeping – used to sleep like a charm but wake up a few times a night these days and doesn’t feel the same…

Monica — adding liqueur definitely helps with the texture. but most importantly, getting the custard to the right thickness which makes it all so creamy during the churning process. the amaretti cookies has a ton of sugar, so go easy on adding sugar in the ice cream base 😉

I can relate to your sleep deprivation and found eating very early in the evening helps a lot with easing into a restful sleep 🙂

Ugh, I hate not having restful sleep. Have you checked out acupuncture and naturopathic medicine? It does help. Western medicine will only give you prescription pills to remedy that problem. Alternative meds checks out the entire body to see what’s causing the problem. Anyway, this amaretto ice cream sounds divine! I would hope it helped with the sleep deprivation. 😉 Looks and sounds amazing Kiran! 🙂

What a co-incidence Kiran! I just finished baking for my next post that has booze 😉
The ice cream looks amazing. I have yet to try amaretto flavor and seeing your post I am itching to try it asap. However, I don’t add egg to my home made ice cream anymore coz it retains hints of egg smell…any idea why that happens?

EFS — perhaps the custard needs a little more cooking time to eliminate the egg smell? or whisking eggs with sugar thoroughly before adding in the milk? adding more extract? i’m unsure 🙂

I too am an amaretto addict, and love that you’ve added it to ice cream. I can almost taste it! Good luck on the sleep thing, wish I had some advice to give, I often get very little. I blame it on hormones and being “over 40”. Ahem.. 🙂

I wish I still had my old ice-cream machine – then again, it was just a cheap one and it seemed to always churn the ice-cream up and over the bowl edge…OK so can I change my wish to just having a big bowl of your amaretto ice-cream ? Love that stuff !

The ice-cream looks fabulous. It’s well known that a nightcap helps to fall asleep, so this amaretto ice-cream might actually prove a delicious way to make sleeping easier.

I suffer from insomnia too Kiran. Some periods more than others. I am 44 and I guess this goes with the territory. I wasn’t much into sleep anyway and now is getting worse. I use earplugs to be able to find tranquility and they helped a lot. But 8 hours of sleep is a luxury for me. The ice cream looks divine!

Wow. What a gorgeous recipe Kiran! Love it… your food styling is impeccable as per usual. Haha… funny you talk about sleep. I’m sitting here at 12.06am, husband is in bed… and I turn 30 in less than a month. I am wondering when it’ll catch up with me. I have ot do most of my blogging late at night or early in the morning before all of my other responsibilities start. It’s so hard to balance things in life! Anyway, hope that you enjoy your time with your husband and feel more rested soon. Not sure that i have any useful tips, but I definitely think I’d feel better after a scoop of that gorgeous ice cream! Hugs xx

Patty — i’m tired most of the time, by end of the day. I guess poor blood circulation might be another reason for sleepless nights. Getting regular massages is so important and I’ve hardly done that in the US. It’s so darn cheap in Malaysia and they do an excellent job getting the knots out! no joke 😀

This Amaretto Ice Cream is gorgeous…and would definitely help with MY sleeping issue! I don’t know, I haven’t sleep more than 8 hrs….for the longest time. I think that was before I was pregnant with my first child. Anyway, hope you’ll get a better sleep soon. 🙂
