Avocado Hummus

Hello Friday!!

Another week just flew by. For a homemaker like me, it doesn’t make any difference. I’d still be cooking and slaving over the stove all week long.

And without pay. Hmmm..

The only solace I get once in a while is from healthy, easy and satisfying recipes like avocado hummus. No slaving over hot stove, or chopping until my cuticles turns into a hideous mess.

Just throw in a bunch of fresh ingredients into my trusty food processor, whirl it away, and I’m done for at least the “snacking” portion of the day.

Ingredients:

  • 1 cup cooked garbanzo beans, drained
  • 1 very riped avocado, sliced
  • 3 tbsp tahini
  • 1/2 lime, juiced
  • 1/2 lemon, juiced
  • 1/3 cup fresh cilantro
  • 3 whole garlic cloves
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup extra virgin olive oil

Serve it up with pita chips or toast!

Directions:

  1. Add all ingredients in a food processor, fitted with blade. Whirl away until smooth.
  2. To serve, top hummus with fresh sliced avocados, chopped cilantro, drizzle of olive oil with toasted garlic and garbanzo beans.

I’m trying to end this post but the Husband is distracting me with his business plans!! What should I do? Listen to him intently, or tell him to shush it and we’ll discuss later?

Love the color and the texture, every time we have a potluck my friends want me to get hummus and am kind of bored getting the same 2-3 kinds i make, this seems like sth they will love !!

I like the idea of avocado hummus since I love avocados. I was lucky enough as a kid to have a avocado tree growing in my backyard, my Dad loved his fruit trees :).

such a great recipe… love the combination of chickpeas and avocado.. avocado just about makes everything tastier. Great photos! Did you know the average salary for a homemaker is at least 120000 USD! :-)

This is so neat! this past week, I was all ready to try a hummus recipe with avocado `i had clipped from a magazine here called fatafeat; i never got around to it, so `i am glad now `i have another version to try out; yours sounds wonderful! and your photos are so beautiful, always!

I cannot contain my excitement for this recipe! I’ve been trying so hard to eat better. This literally has everything I could want in a snack. I bought Health On Your Plate this week.. it got me determined to at least soak and cook my beans ahead of time, so many bad preservatives in canned stuff. I will have to take the time out for this recipe, though! Thanks!!!!

Nathan — welcome to Recipebox and thanks for the lovely comments and sharing your eating journey with us. I don’t like utilizing beans out of can either. The key is to soak it overnight, rinse with fresh cold water the next day and cook it to desired softness. I’m sure a slow cooker would be pretty handy here. Hi! Soak the beans for a few hours. Cooking time would depend on how long you soak it for. If u soak it for 2 hours, it might take you between 1 to 2 hours to cook it on the stove. Pressure cooker would take a few minutes if you have one. Make sure it’s cooked till soft in order to blend. Have fun & Happy Cinco de Mayo!

This seems like it would be delicious. I’ve been seeing so many different ways to use avocado lately. Somebody recently made an avocado pesto to put on pasta. I’m adding this to the list of things I need to make!

Avocados are so versatile. I’ve seen ice creams, cookies, cakes etc. There’s so many use of it, apart from regular guac :D
