Roasted Beet Salad

Can someone please explain how is it possible that it’s already January the 31st of 2012? I mean, it’s practically mind-boggling, no? It almost feels like we are living in a time warp or something — where time seems to escape like a bullet train each day.

Since February 14th is approaching fast as well, my suggestion is to make this salad. Not only its very color appropriate — it’s extremely tasty, fresh and simple to make.

So long you promise not to jut out your tongue after eating it ;)

Anyways, I have another complain — ok, I am a complain pot but I can’t help it.

There’s an epidemic in the supermarkets. I hate it whenever the produce display is always so wet. There’s water sprinkler everywhere!! Am I wrong to believe that spraying water would make it more susceptible to rot? It’s ok to keep it a little moist, but why soak it?

But it never hurts to ask! I needed some fresh and dry bunch of beets (not soaked in water madness!) and thank god they had some in a box, un-assembled. I can still recall that guys’ facial expression. He did asked why I demanded for such request. And I told him about my aversions to wet produce.

Some people hate veggies — well, I hate veggies that are soaked in puddles! Win-win, eh? ;)

Inspired by – Vegetarian Bible, from the earth to the table

Ingredients:

  • 3 – 4 medium beets
  • 4 tbsp extra virgin olive oil
  • 1/2 tsp salt
  • 3-4 fresh mint leaves, chiffonade
  • 1 tbsp lime/lemon juice
  • 1/2 tsp coarse sea salt

Directions:

  1. Preheat oven to 345F. Line a baking sheet with foil.
  2. If using fresh beets, carefully remove roots & stalk from beets without cutting into the skin.
  3. Gently rub beets under cold running water without splitting skins, to remove any dirt.
  4. Pat dry beets with paper towels. Place on the foil and gently coat beets with 2 tbsp of olive oil and 1/2 tsp salt. Wrap foil to cover beets completely and roast between 30 – 45 minutes (depending on the size of beets).
  5. In a bowl, add 2 tbsp extra virgin olive oil, lime juice and coarse sea salt. Whisk until smooth.
  6. Remove beets from oven to cool enough to handle, then peel away the skins.
  7. Chop beets to bite size and add it in the dressing bowl to coat.
  8. Cover to chill for at least an hour before devouring ;)

 

I am off to sulk at wet produce, and hopefully there would be better resort to preserving vegetables than dumping boat-load of water on it!!! Ewww!!!

The key is to roast it, whole — peeling and cubing thereafter would lessen the mess or “coloration”. Gloves makes it easier, all the time :D

Oh I love beets Kiran! This is just wonderful…. I used to make beet salad from scratch, but nowadays I have to admit I’m cheating and using Trader Joe’s ready-to-use beets. =P Still, I’m in love with beets. Your roasted beet salad totally hit my spot. LOVE IT! I can eat crazy amount of it if you let me…. ;-)

I know what you mean…one month has already flown by! You take such beautiful photos. I love beets, and love them in salads and as sides. This recipe is so simple, yet so flavoursome! I have steamed beets and then dressed them for a salad, but never roasted. Should try this one out.

Beets are so healthy and its part of my diet though my hubby does not fancy it at all. I will love to try out this simple beet salad either by it own or to fill up my tummy further, a small bowl of rice to go with it.

You are right—January has vanished, just like that! Time moves so quickly–although I never mind that in the winter. Your beets look beautiful. I’ve never seasoned mine with fresh mint, and I think that’s a great idea. Stay dry in the produce department!

I dont like wet veggies either. I hate it when they r full of cow shit too!!!
Tell that my veggie seller… at least we get fresh veggies in a market.
Beet salad… hmm… sounds ultra healthy and it is!
but I am not a beet fan except if I add them to an ABC juice.

i could eat beat everyday and i never gets bored. sometimes i made beet salad mix with olives. in bali, beets such jewel, they sell per 2pc and wrap in plastic cling, goosshh…the price is just such a pain

I love roasted beets and the combination of lemon and mint sounds fabulous! I will have to try this as I usually roast beets the same way each time I make them.

And I’m with you, I don’t want soaking wet produce. I don’t think it would be good for the food either.

I once reached my hand out for some produce when the jets started. They made such a noise I got the fright of my life. Shopping can be so risky! I love the look of your non-soggy beets. Beetroot salad is one of my most favouite salads. I love not only the taste but the colour it brings to the plate. Great with lamb.

I never thought about it, but now that you mention it, I would agree that it would seem to make some vegetables more likely to rot. I love beets and would never have thought to pair them with mint. Lovely!

Ha, well consider yourself lucky that you’re able to get “raw” beets. All the ones I see in France are pre-cooked. Either pre-cooked and pre-packaged, or just pre-cooked en-masse and dumped into a large styrofoam box and shipped off to the market. Do they think they’re being helpful or something? Considering you can eat the stuff raw there’s just no need to pre-cook the things… Means I’m never able to make roasted beetroot anything :’(

I agree!! Wet produce is awful. I think it is a conspiracy to make it rot as soon as we bring it home so that we have to buy more.

The beet salad looks interesting. I love beets, but am not so much a fan of mint. Would other herbs sub well in the recipe?
