Easy avocado ice cream

Want to know what we do to celebrate and thank god it’s Friday? With simple desserts! Whole Foods recently had a great sale on avocado’s and of course we loaded up! The possibilities of using avocado’s are endless, from simple guacamole to quesadilla and tortilla soups. Yummy, creamy and smooth texture. I bet a smoothie would be just as good. I am ready to welcome summer :)

Have you tried Avocado’s? What are your favorite way of using it?

Avocado ice cream recipe adapted from my lovely friends, Bahar & Sami :)

Ingredients

  • 2 scoops of vanilla ice cream
  • 2 oz milk
  • 1/2 avocado flesh
  • 1 tsp honey
  • chopped pistachios for garnish

Directions

  1. Blend 1 scoop of ice cream, milk and avocado.
  2. In a serving bowl, add 1 scoop ice cream. Top it off with the blended avocado.
  3. Drizzle over some honey and garnish it with chopped pistachios.

Try substituting ice cream with yogurt. I am sure it would taste as fabulous.

I bet this wonderful. We had an avocado tree in our backyard when we lived in Naples, FL. I sure miss that. Fresh!!!!

You had an avocado tree while growing up? Awesome!! Nothing like freshness from the tree, to ready-serve-eat. You’ve got to try this recipe since you are well acquainted with avocados ;)

Hi Kiran,
I just accepted your friendship on the Tasty Kitchen forum a few minutes ago and came by to check out your blog. I love avocados! Mmm. I mostly use them to make a very simple guacamole, sometimes in a sandwich or on a burger, but avocado ice cream sounds awesome! My husband is from the Philippines and I have had a sweetened avocado dessert that I think was made from pureed avocado and sweetened condensed milk. I’ll have to try to figure out how to make that again.

I always mash avocado really well and then stir it through softened vanilla ice cream though I hate avocado any other time! Great recipe :D
