And love guacamole! I always refer guacamole as an “earthen” food. No cooking, so fresh and natural.

Are you having trouble finding the “light” to photograph? Any tips?
- 1 ripe avocado, peeled and cubed in bite size pieces
- 2 tbsp finely chopped onions
- 1 tbsp lemon juice
- 1 tbsp chopped fresh coriander
- 1 tsp pickled jalapeno
- pinch of salt & pepper
- Dump everything in a bowl, mix and serve cold with either tortilla chips or fresh pita breads. Try adding guacamole in wraps as an alternative to hummus. Delish 😉
